Where are you from?
This month's coffee is Colombian, from Huila, and is grown in the southern Andean region. This coffee is grown by rural communities in around 35 municipalities, which employ more than 83,000 families. They grow Arabica coffee in approximately 145,000 hectares of various varieties, such as Castillo, Colombia, Caturra, Tipica, Bourbon, among others. It is estimated that around 53% of Huila's exports are derived from coffee, this industry employs around 101,000 people, which means that 74% of Huila's rural population is dedicated to coffee farming.
Process...
The processing of this coffee is washed, which means that the cherry is pressed, the green bean is removed and left to ferment in water for about 12 to 18 hours. With this method, we expect a cleaner coffee, with greater acidity, less body and less sweetness.
It is rated 84 and has two varieties, Castillo and Caturra. Focusing on the Castillo variety, it has high plant productivity, resistance to leaf rust and is small in size. The Caturra variety is originally from the state of Minas Gerais, in Brazil, but has adapted well to the soils of Colombia and Costa Rica. It is also small in size, has larger and wider leaves and has a high production capacity in the first years, which reduces rapidly later.
Aromatic notes
After correct extraction of this coffee, we can expect aromatic notes of citrus fruits, for example, lime, lemon, orange and grapefruit.
